Michel Richard's Citronelle

See, I told you I will have something up.
And now I have.
Ain't bad, huh.

Date: Some time in February 17th 2008
Dining Room: The multi-level dining room features a very high celling where various functioning parts of the room are divided by the level it sits on. Soft lighting mixes with the grey backdrop and red drapery for a very modern, sensual dining atmosphere. A well-lit, vast open kitchen is sectioned off by glass walls behind the chef's table.
Notes: Reservation for 5, semi private dining area. A la Carte Menu 3 courses $95 PP.
Wine: Chateau de Fonbel 2000, Grand Cru, St Emillion, Bordeaux. $64

Entrees:
Miso marinated sablefish
This is one gasp-indulcing dish. Perfectly cooked, miso seemed to compliment this oily fish perfectly. Whie the flavor profile is bold, the sweetness of the fish was not only uncompromised, but nicely accented.

Seared squab breast w/ foie sauce, crusted squab leg confit, macaroni & cheese
breast with foie sauce was a beautiful, ethereal combination. The richness and flavor of the sauce was pure indulgence. It worked particularly well with the wine selection we had this night.

What more do you want me to say? it's a poached john dory.

"Citronelle Breakfast"
Is it an actual breakfast? hmm? you see that perfectly fried egg in skillet? it's actually apricot gelee suspended in a pool of coconut milk. I will let you discover what the rest of the items are when you visit Citronelle yourself.


Pomme Jolee
Perfect ending to a wonderfully creative and satisfying meal. It's the most intense tasting green apple sorbet I've ever tasted. Studded with frozen shaved apple, the tartness and the sweetness of the apple juice offer the much-needed cleansing of the palate. Simple, yet absolutely sublime.
